This simple cucumber salad can be served on its own, or as a base for all sorts of fun salads (shown above, I simple added red onion, feta, chicken and dill).  It is kid-friendly; using rice wine vinegar makes sure it isn’t too tart!

Simple Cucumber Salad

1 pound of mini or Persian cucumbers, diced
2 teaspoons salt 
2 teaspoons sugar (or one pack of stevia or monk fruit sweetener)
2 tablespoons rice wine vinegar

Place the cucumbers in a small bowl.  Add the salt and sugar, stir, and let sit for about 5 minutes (this helps extract some of the water from the cucumbers).

Add the vinegar, and stir well.

Can be served immediately, but tastes best after an hour or so of marinating.

Serves 4-6 as a side dish.
