4 Ingredient Buckeye Cookies

1 cup peanut butter (not the natural type that separates)
½-1 cup sugar (I use ¾ cup)
1 egg
½ cup chocolate chips

In a large bowl, combine the peanut butter and sugar until fully incorporated.

Whisk the egg and add to the bowl, stir until fully combined.

Add the chocolate chips and stir until fully mixed into the batter.

Refrigerate the dough for 20-30 minutes (can skip if in a hurry—but then reduce the baking time by a few minutes).

Preheat oven to 350 degrees.

Place tablespoon-ish size ball of dough on a cookie sheet.  Press down gently to partially flatten.

Bake 12-15 minutes, or until *slightly* brown on the edges.

Makes approximately 24 cookies.
