Avocado Citrus Shrimp Ceviche

This “ceviche” features shrimp that has been precooked (traditional ceviche has raw seafood) and is a delicious break from the ordinary.

🥑Avocado Citrus Shrimp Ceviche🍋

12 oz medium shrimp, peeled and deveined
1 ½ cups diced cucumber
½ cup diced onion
Juice of one large orange
Juice of 2 limes (or one lemon/one lime)
½ cup chopped cilantro
1 small jalapeno, diced (optional)
½ - 1 teaspoon salt
2 avocados, diced

In a medium pot, bring water to a boil. Add the shrimp and cook for 3-4 minutes or until cooked. Remove and rinse with cold water to stop the cooking.

Cut each shrimp into bite-sized pieces (about 3-5 pieces each shrimp). Add to a medium bowl.

Add the cucumber and remaining ingredients, except the avocado (you will add this right before serving).

Mix well. Tastes best if you allow it to marinate in the fridge for 1 hour or up to 8 hours before serving.

Before serving, add the avocado, and mix one more time.

Serve with tortilla chips.

Makes about 3 cups of ceviche.
