Baked Apple Fritters with a Vanilla Glaze

Baked Apple Fritters with Maple Glaze

1 ½ cups Gluten free flour (or use regular if GF is not needed)
¼ cup brown sugar
1 tablespoon baking powder
2 teaspoons pumpkin pie spice (or cinnamon)
⅓ cup milk (non-dairy is fine)
2 eggs (whisked)
1 teaspoon maple or vanilla extract
1 tablespoon extra virgin olive oil 
1 cup diced apple (no need to peel)—about ¼” pieces 

Glaze:
1 cup confectioner’s sugar
1 teaspoon vanilla (or try maple!) extract
2-3 tablespoons milk

Preheat oven to 400 degrees.

In a large bowl mix the flour, brown sugar, baking powder, and pumpkin pie spice/cinnamon. Mix a few times to combine. 

Add the milk, eggs, extract, and oil. Mix well until just combined. The dough will be thick.

Add the apple and mix until just combined. 

On a cookie sheet (spray with cooking spray first), or in lined muffin tins, drop 2 tablespoons of dough into little mounds.

Bake 15 minutes. 

While the fritters bake, mix the glaze until it’s the desired consistency. Thicker is better because it will “melt” a bit when put on the warm fritters. 

Once fritters are baked, remove them from the oven.

Let cool 5-10 minutes. Use a spatula to remove it from the tray and place on a plate or tray to glaze. Gently drizzle glaze on top. 

Makes about 1 1/2 dozen fritters
