Crispy Oven-Fried Chicken Wings
You can use an air fryer, but you don’t need it–a high heat oven (convection preferred) will serve you well.
Crispy Oven-Fried Chicken Wings
1 ½ pound chicken wings (you do not need to cut at the joint–but you can if you prefer)
1 tablespoon baking powder
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon smoked paprika
½ teaspoon salt
½ teaspoon ground pepper
Cooking spray
Preheat oven to 475 degrees (450 for convection).
Dry your wings really well. Then dry them some more. Moisture will reduce the crispiness.
Place in a large bowl. Sprinkle with baking powder, spices, salt, and pepper. Toss very well to cover each wing entirely.
Place on a drying rack or icing rack over a baking sheet (this allows for airflow all around the wings=crispier wings).
Bake for 20 minutes. Remove from oven and briefly spray with cooking spray.
Return to oven. Bake for 10-20 minutes or until no longer pink inside.
Serve either naked or with your preferred sauce.
