Fireworks Coleslaw (can halve for a smaller crowd)

8 cups shredded Napa or green cabbage
4 cups shredded red cabbage
1 cup shredded carrot
1 cup corn
½ cup fresh parsley or cilantro (or a mix)

1 cup apple cider vinegar
¼ cup tamari or coconut amino (or soy sauce if GF is not an issue)
3 tablespoons sesame oil
⅓ cup maple syrup
1 teaspoon salt
½ teaspoon pepper
3-4 tablespoons sesame seeds (optional)

Place vegetables and herbs in a large bowl (if you don’t want to shred the cabbage, 2 - 16oz bags of coleslaw mix) and add the corn and herbs.  Mix well.

Mix the vinegar, tamari, sesame oil, maple syrup, salt, and pepper, shaking well.  Pour over the vegetables and herbs.

Sprinkle with 3-4 tablespoons of sesame seeds, if using.

Tastes best if made several hours or the day before serving…just toss a couple times to redistribute the dressing.

Serves 16-20.
