Higher Protein Apple Crisp (GF)

5-6 medium to large apples, diced
1-2 tablespoons fresh lemon juice
1 ½ tablespoons cornstarch
¼ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg (okay to omit)
¼ teaspoon ground ginger (okay to omit)
1 tablespoon maple syrup (or honey or sugar/sweetener of your choice)
½ cup GF oats
½ cup almond flour
1/2 cup vanilla protein powder
4 tablespoons butter or dairy-free butter

Preheat oven to 350 degrees.
In a large bowl combine the apples, lemon juice, cornstarch, salt, cinnamon, nutmeg, ginger, and maple syrup. Pour into a 9x9 or similar-sized baking dish.

In the same bowl, combine the oats, almond flour, vanilla protein powder, and butter. Stir well and drop in little clumps on top of the apple mixture.

Bake uncovered for 30-40 minutes or until the apples are bubbly and topping is browned a bit.

Serves 6-8
