Miso Braised Brussels Sprouts

1 tablespoon sesame oil 
1 bag (about 12oz) shaved/shredded Brussels sprouts
1 tablespoon grated fresh ginger
3 garlic cloves, minced
3 tablespoons Tamari or coconut aminos
4 teaspoons miso paste
2 tablespoons rice wine vinegar

Heat the sesame oil in a large skillet over medium heat. Add the Brussels sprouts and stir a bit, then let sit for a few minutes to brown. Sauté for a total of 5-7 minutes or until they are a bit wilted and browned. 

While they’re cooking, combine the ginger, garlic, tamari/coconut aminos, and miso paste. 

Pour over the Brussels sprouts and sauce 1-2 minutes. 

Finally, add the vinegar and scrape the bottom of the pan with a metal spatula or something flat to deglaze (basically, loosen all the tasty browned bits off the bottom of the pan).

Serves 4 as a side dish.
