Parmesan Crusted Potatoes & Radishes
2 pounds total of potatoes, sweet potatoes, and radishes (you choose–can do all potatoes)
¼ cup olive oil
⅓ cup grated parmesan cheese
½ teaspoon garlic
½ teaspoon salt
¼ teaspoon pepper
Preheat oven to 425 degrees.
Rinse and cut potatoes into bite-sized pieces. Score each flat side to create a little grid. Let dry fully as you prepare the pan.
In a 9x13 baking dish, combine the olive oil, cheese, garlic, salt, and pepper. Stir well to combine and make a paste. Spread the paste evenly over the bottom of the dish.
Place each potato and/or radish grid-side down.
Bake for 30-35 minutes. Garnish with parsley, if desired.
Serves 4.
