Roasted Radishes and Potatoes

1 large bunch radishes
1 pound baby potatoes (I used Trader Joe’s Teeny Tiny Potatoes)
1-2 tablespoons extra virgin olive oil
1 teaspoon seasoned salt

Preheat oven to 450 degrees.  Place a baking sheet in the oven to heat as well (by doing this, when you add the potatoes and radishes they will immediately start to brown nicely).

Rinse and pat try your radishes and potatoes.  Slice into half, unless they are smaller…you’re going for the pieces all to be a similar size, so just slice as needed.

Drizzle with olive oil, sprinkle with seasoned salt, and toss well. 

Once the oven has preheated, quickly remove the baking sheet, add the potatoes and radishes, making sure they are in a single layer.

Bake 30-40 minutes or until browned…you may want to toss them once during the baking.

Serves 4-6.
