Roasted Sweet Potato Quinoa

2 cups of cooked quinoa
2 cups roasted sweet potato
1 - 15oz can chickpeas, drained
½ cup chopped red pepper
½ cup crumbled goat or feta cheese
¼ cup raisins or craisins
½ cup red onion

Dressing:
⅔ cup olive oil
⅓ cup balsamic
1 large clove garlic, minced
1 tablespoon dijon mustard
1 tablespoon honey
½ teaspoon salt 
½ teaspoon pepper
¼ teaspoon dried thyme
(you will have extra for salads, etc)

1/2 cup chopped or sliced almonds
2 tablespoons chopped mint or parsley

In a large bowl, combine the quinoa, roasted vegetables, chickpeas, pepper, cheese, raisins/craisins, and red onion. 

In a jar with a tight lid, combine all the dressing ingredients (oil, balsamic, garlic, dijon, honey, salt, pepper and thyme). Shake very well.

Pour ½ cup over the quinoa, and then garnish with almonds or fresh mint/parsley.

Serves 4.
