Slow Cooker Red Lentil Soup

So simple and yummy! Cooks all day and is ready when you’re ready to eat!

Red Lentil Soup

1 tablespoon coconut oil
1 ½ cups red lentils
2 onions, chopped,
4 cloves of garlic, chopped
1 rib of celery, chopped
1 carrot, chopped or shredded
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon turmeric
1 teaspoon salt
1 teaspoon pepper
1 quart broth (veggie or chicken)
2 cups water
1 tablespoon ketchup
Toppings: a squeeze of fresh lemon juice, parsley, hot sauce.

Place all ingredients in the slow cooker.  Cook on high for 4-5 hours, low for 8-10.

Blend with an immersion blender or carefully in batches in a regular blender.

Squeeze a bit of lemon on top of each bowl (if no lemon on hand, use a drizzle of red wine or balsamic vinegar), fresh parsley and/or hot sauce if desired.

Serves 4-6
