This recipe balances the tartness and acid of fresh pineapple with a bit of extra virgin olive oil, enhanced with salt, and yes, pepper.  

The salt actually minimizes the tartness of pineapple, and the olive oil complements the acid of fruit too.

Try it–it elevates a simple fruit to a sophisticated, simple side.

Spanish Pineapple

1 ripe pineapple, diced
Salt
Pepper
Extra virgin olive oil

Place the desired portion of pineapple in a bowl.  Add a pinch of salt and a touch of pepper.  Drizzle with a bit of extra virgin olive oil.
