Spice-Rubbed Pork Chops with Honey Mustard Sauce

4 bone-in pork chops
1-2 tablespoons extra virgin olive oil
½ teaspoon salt
½ teaspoon pepper
1 tablespoon smoked paprika
1 teaspoon garlic powder
2 tablespoons plain Greek yogurt
2 tablespoons Dijon mustard
1 ½ tablespoons honey
1 tablespoon apple cider vinegar

Drizzle each pork chop with a bit of olive oil.

Combine the salt, pepper, smoked paprika and garlic powder.  Rub approximately ¼ on each pork chop.

Grill until a meat thermometer reads 145 degrees internally, without touching the bone.

Let the pork chops rest for 5-10 minutes.

While they are resting, mix the yogurt, mustard, honey and vinegar.

Drizzle the pork with the honey mustard sauce and enjoy!
