Tajin Spiced Smashed Potatoes πŸ™Œ

1 1/2 pounds little potatoes
3 tablespoons extra-virgin olive oil
2 teaspoons Tajin seasoning

Preheat oven to 425Β°. Line a baking sheet with parchment paper and drizzle 1 tablespoon of olive oil on top.

Boil the potatoes for about five minutes prior to roasting, make sure they are dry before putting them on the roasting pan so they brown instead of steam!

Once the potatoes are dry, line them on the parchment paper and then gently smash with the bottom of a cup or glass.

Sprinkle with the seasoning, if you don’t have Tajin, you can use 1 teaspoon of salt, 1/2 teaspoon of pepper, and 1/2 teaspoon paprika.

Roast for 20 to 25 minutes or until the edges begin to brown and are crispy on the outside.

Serves 4 to 6 as a side dish.
