Three Ingredient Chocolate Mint Fudge

One bag semisweet chocolate chips (a typical bag has 1 ½ -2 cups)
½ as much almond butter
1 ½ - 2 teaspoons peppermint extract per cup of chips

Optional green swirl:
A tablespoon or two of powdered sugar
1-2 drops green food dye (preferably natural–lots of good options out there!)

Melt the chocolate and almond butter on low in a slow cooker. Stirring occasionally, until it is melted (takes about 30-60 minutes). Add 1 ½ teaspoons of peppermint extract per cup of chips and stir well.

Taste the chocolate mixture. If you would like extra peppermint flavor, add about another ½ teaspoon per cup of chocolate chips. Stir again.

Pour into a dish lined with parchment paper (I use a 8x4 size, and this yields a nice, thick fudge).

Drizzle the optional green swirl on top, if desired. 

Let firm up in a freezer or fridge for about an hour, then slice as desired.

Once firm, it will stay firm at room temperature.

Example of measurements:

1 ½ cups chocolate chips
¾ cup almond butter
3 teaspoons (or one tablespoon) peppermint extract
