Zucchini Crisps
Easy Zucchini Cheese Crisps
½ cup VERY well-squeezed shredded zucchini
½ grated parmesan cheese
¼ teaspoon ground pepper
¼ teaspoon dried oregano
Preheat oven to 400 degrees.
Shred zucchini (will start with about 1 cup of shreds) and press, squeeze and press again to remove excess liquid.
Mix all ingredients until very well combined.
Place heaping tablespoons on a baking sheet lined with parchment paper or a silicone liner.
Spread thin with the back of the spoon.
Bake for 8-10 minutes or until slightly browned. **Let cool for at least 5 minutes before removing with a spatula**.
Makes 12-15 zucchini crisps.
