3 Ingredient Peanut Butter Skillet Cookie

1 cup peanut butter (I use the Costco/Kirkland Natural PB)
½-1 cup sugar (I use about ¾ cup)
1 egg

Preheat oven to 350 degrees.

In a large bowl, combine the peanut butter and sugar until fully incorporated.

Whisk the egg and add to the bowl, stir until fully combined.

Press down gently and flatten into an approximately 10” cast iron skillet, pie dish (usually 9-10”) or similarly sized oven-safe dish. If you wish, you can score the top to give it a bit of the “criss cross” look you get from pressing down a traditional peanut butter cookie gently with a fork.

Bake 12-15 minutes, or until *slightly* brown on the edges.

Makes 1 giant cookie. :)
