High Protein Snack Jars
🙌High Protein Snack Jars (recipe makes 2)🙌
1 cup cottage cheese
2 oz goat cheese
1 tablespoon lemon juice
¼ teaspoon ground pepper
½ cup diced vegetables (such as cucumber, bell pepper, tomato, or broccoli)
¼ cup nuts (such as pepitas or pistachios)
Optional: 1-2 tablespoons fresh herbs (such as dill, basil, parsley, or mint)
Blend the cottage cheese, goat cheese, lemon juice, and ground pepper together. Place in a jar or a pyrex container. Layer vegetables on top, nuts, and then herbs if using.
Perfect for a high-protein snack (this version has about 23 grams of protein per jar), light breakfast or lunch.
