Buffalo Chicken Sandwiches

2-3 pound boneless chicken breasts or thighs
½ teaspoon salt
½ teaspoon ground pepper
½ teaspoon garlic powder
½ cup buffalo sauce (I like Primal Kitchen Buffalo Sauce) plus extra for sandwiches
½ cup water
To serve:  bread or bun, coleslaw, blue cheese, red onion

In a slow cooker (or instant pot) add the chicken, salt, pepper, garlic powder, buffalo sauce, and water.  Cook on high for 3-4 hours or low for 6-8 hours.

Remove from the slow cooker and gently shred with a fork.  The chicken will basically fall apart.

Serve on top of bread or a bun, drizzle with extra sauce, and top with coleslaw, blue cheese, or whatever you wish!

This recipe makes enough for leftovers, so freeze extras if you want or use to serve a crowd!

Serves 8-12.
