Shake It Up Shrimp Fajitas

1 pound shrimp
2 tablespoons taco seasoning
2 tablespoons olive oil
1 bell pepper, sliced
1 sweet or red onion, sliced
(I also like to saute some mushrooms too, but you can omit)
Tortillas
Toppings:  (use what you like) salsa, sour cream, shredded cheese, shredded lettuce, cilantro

In an airtight container with well fitting lid, place 1 tablespoon of taco seasoning.  Add half the shrimp, close tightly, and shake to coat the shrimp.

(If your container is smaller, you can do it in smaller batches, adjusting the seasoning ratio as needed).

Heat 1 tablespoon of olive oil in a saute pan over medium heat.  Add the pepper and onion and cook for 4-5 minutes or until they are softened a bit.

Remove from the heat and set aside.

Wipe out the pan and add another tablespoon of oil.  Cook the shrimp, 2-3 minutes per side, or until no longer grey.

Serve in tortillas with shrimp, peppers, onions and desired toppings.

Serves 4.
