Baja Fish Tacos

2 tablespoons olive or coconut oil
12 oz cod filets (about ¾-1” thickness)
½ teaspoon Tajin seasoning (or taco seasoning)
Tortillas
1 cup Shredded cabbage
Cucumber Mango Salsa (link)
1 cup corn

Optional toppings:
Fresh cilantro
Shredded cheese
Diced avocado
Sour cream

In a large saute pan, bring the oil to a medium high heat.

Meanwhile, pat the fish dry with a paper towel, and sprinkle one side with the Tajin or taco seasoning.

Once the oil is hot (moves easily in the pan, place the cod filets in the pan, seasoned side down.  Cook for 4-5 minutes, carefully flip, and cook just 1 minute more.

Remove the fish from the pan and let cool for a few minutes.

While the fish is cooling, prep your tortillas.  Place a couple of small pieces of fish in each tortilla, then top with some some shredded cabbage, salsa, and corn…these tacos can be easily customized to what works best for you, so play around with the best toppings!
