BBQ Chicken Quesadilla

1 cup shredded chicken
¼ cup barbecue sauce
½ cup shredded colby jack or cheddar
2 tablespoons diced red onion
2 tablespoons chopped cilantro or parlsey
Optional: 2 tablespoons bell pepper, corn and/or black beans
4 tortillas
1-2 teaspoons extra virgin olive oil

Heat a skillet over medium-low heat.

In a medium bowl, mix the chicken and barbecue sauce.  

Take a tortilla and spread ¼ of the chicken mixture over half of it.  Top with the cheese, onion, cilantro or parsley, and any other optional toppings.

Repeat with the other tortillas.

Add the oil to the pan, let heat for just a bit (about 30 seconds) and then carefully add 1-2 tortillas in a pan. If the top wants to “pop” up, you can gently press down and hold with a metal spatula until the cheese melts enough to hold it in place.  Cook for 3-4 minutes, and then carefully flip.

Cook 1-2 on the other side and then remove from the skillet.

Let cool 1-2 minutes and then slice with kitchen shears or a pizza cutter.

Makes 4 quesadillas.
