Make-Ahead Breakfast Totchos

Approximately 40ish Tater Tots
1 tablespoon extra virgin olive oil
1 yellow bell pepper, finely diced*
1 small onion, finely diced
½ teaspoon salt 
¼ teaspoon pepper
½ pound ground breakfast sausage (could also use links or patties cut
into pieces)
1 cup of shredded cheese

Preheat oven to temperature recommended on package of tater tots.  Layer the tater tots in a single layer in a 9x9 glass dish.  Bake according to package instructions, then let cool.

While the tater tots bake, prep the vegetable and sausage topping: in a medium or large skillet, over medium heat, add the olive oil and then the bell pepper and onion. Stir a bit, and then add the salt and pepper.  Cook for 4-5 minutes, or until the vegetables begin to soften a bit.

Add the sausage, and saute until fully cooked and browned a bit.  Let cool a bit.

Sprinkle the vegetable and sausage mixture over the top of the tater tots.  Then add the cheese.

(You can bake for 10 minutes at 375 degrees at this point, or you can put it in the fridge for the next morning).

If making ahead, cover and place in the refrigerator for the night.

When ready to bake, preheat the oven to 375, and remove the totchos from the refrigerator.  Make sure the cover is oven safe, and bake for 15-20 minutes or until the cheese is melted and the edges are bubbly.

Top with sliced green onions, avocado, or desired toppings.

Makes 4 servings.

*You could also try: chopped spinach or kale, mushrooms, broccoli or zucchini.
