Chopped Greek Salad with Lemon and Mint

1 large English cucumber, chopped
1 cup diced fresh tomatoes
½ bell pepper, chopped
¼ cup thinly sliced red onion
4oz fresh feta, crumbled
½ cup chopped kalamata olives
6-8 mint leaves, thinly sliced

Dressing:
3 tablespoons fresh lemon juice
⅓ cup extra virgin olive oil
½ teaspoon salt
½ teaspoon pepper
½ teaspoon dried oregano
2 cloves fresh garlic, minced

Combine the veggies, and if using feta and olives. You can even add a bit of diced watermelon for a fun flavor twist.

Combine the dressing and stir well pouring over the salad.

Serves 4-6 as a side.
