Marinated Tomatoes with Parmesan

Marinated Tomatoes with Parmesan aka Tomato Soup in Salad Form

2 cups diced tomatoes (about 12 oz)
½ teaspoon salt
½ teaspoon pepper
2 cloves fresh garlic, minced
2 tablespoons fresh basil, thinly sliced
2 tablespoons extra virgin olive oil
Shaved fresh Parmesan to taste (I use 1-2 tablespoons)

Combine all ingredients but Parmesan in a bowl. Stir well to combine.

Top with Parmesan as desired (or add another cheese you prefer).

Serves 4 as a side dish.
