Easy Apple Crisp (GF)

I love a good apple pie and Graham makes darn good apple fritter, but when I want to
keep it simple, nothing beats an apple crisp.

And an apple crisp tastes good no matter what season, doesn’t this time of year just beg for one to be made?

Here’s my tip for making apple desserts with even great ease:  skip the peeling.  When you ditch the apple peeling this crisp comes together in a snap.

Easy Apple Crisp
Fruit filling:
6-8 apples (I used Granny Smith and Honeycrisp)
2 tablespoons brown sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Pinch of salt
Juice of half a lemon
1 tablespoon cornstarch

Oat topping:
1 cup old fashioned oats
½ cup brown sugar
½ cup flour
½ teaspoon ground cinnamon
Pinch of salt
6 tablespoons butter, melted

Preheat oven to 350 degrees. 

Slice apples and place in a large bowl.  Add the sugar, cinnamon, nutmeg, salt, lemon juice, and cornstarch.  Mix well to incorporate.  Pour into a 9x13 glass baking dish and bake, covered for 15 minutes.

While the apples are baking, combine the oats, brown sugar, flour, cinnamon, salt, and butter.  Mix well.

After the apples have been baking for 15 minutes, remove the cover, stir the apples, and sprinkle the oat mixture on top.  No need to press down or do anything special.

Return to the oven for 25-30 minutes, or until the oats are slightly browned.

Serves 8-10.
