Super Fast Black Bean Soup

Here in Columbus, it is perfect soup weather today.  This 10 minute (really!) Black Bean Soup is just perfect for a busy night.

10 Minute Black Bean Soup

2 - 15 oz cans black beans, undrained
1 cup salsa (choose any you like!)
2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon smoked paprika (regular is fine too)

Optional:  ⅓ cup corn salsa or frozen corn
Toppings:  sour cream, cheese, avocado, cilantro, chips

Blend or mash one can of beans.  In a medium pot add the other can of beans, the blended or mashed beans, salsa, cumin, chili powder, paprika, and corn, if using.

Stir.  Allow to simmer for a few minutes.

Serve with preferred toppings.  

Serves 4.
