Greek Tzatziki

1 medium seedless cucumber, peeled 
¼ teaspoon salt
1 ½ cup plain Greek yogurt
2 tablespoons fresh mint
1 teaspoon fresh lemon zest (optional)
1 1/2 tablespoons fresh lemon juice
2 cloves garlic, minced
½ teaspoon salt
2 tablespoons extra virgin olive oil

Grate or finely chop the cucumber and place in a colander. Sprinkle with ¼ teaspoon salt and let sit for 15 minutes. This allows some of the water to be released, so you will have a creamier tzatziki.

Meanwhile, prep the other ingredients.

Then, in a medium bowl, combine the yogurt, cucumber, mint, lemon zest (if using), lemon juice, garlic, salt, and 1 tablespoon olive oil.  Stir well to combine.

When ready to eat, drizzly the top with the remaining olive oil.  Tastes even better the next day!  Serve with crackers, fresh vegetables or with grilled chicken.

Makes about 1 ¾ -2 cups of tzatziki.
