Everything Bagel Salmon Rice Bowl

1 pound salmon
2 tablespoons soy sauce or coconut aminos
1 tablespoon honey
1 ½ teaspoons everything bagel seasoning
1 tablespoon sesame oil
2 cups cooked Rice or cauliflower rice
Sliced Cucumber (½ large or 1 medium)
1 sliced Avocado 
1 diced mango
¼ cup pickled onions or green onions
¼ cup mayonnaise
2 tablespoons greek yogurt (or more mayo)
2 tablespoons sriracha
¼ teaspoon garlic powder
A few more shakes of everything bagel seasoning

Cut the salmon into bite-sized pieces. Add salmon, soy sauce or coconut aminos, and honey to a large bowl.  Mix well, and sprinkle with the everything bagel seasoning.  Mix again.

In a large saute pan over medium heat, add the sesame oil.  Let the pan get hot, about 1-2 minutes. Add the salmon and saute for 2-3 minutes.  The salmon will not be fully cooked when you remove it from the heat, but the residual heat will cook it through.  Let salmon rest for 4-5 minutes, and then you are ready to plate

While the salmon is resting, mix the spicy salmon sauce–mayo, yogurt (if using), sriracha and garlic powder.

In each bowl, add rice and the desired toppings. Drizzle with spicy salmon sauce and top with a shake or the seasoning.

Serves 4.
