Pickled Red Onions

1-2 red onions (usually 1 large or 2 smaller ones)
⅓ cup boiling water
1 tablespoon sugar or preferred sweetener
2 teaspoon salt
⅔ cup apple cider vinegar

Slice the red onions and place them in a glass jar with a lid.

Bring the water to a boil (a glass measuring cup works well) and add the sugar and salt.  Stir until the salt and sugar are fully dissolved.  Add the vinegar and stir again.

Pour over the red onions and seal with the lid.  Turn the jar upside down to ensure full distribution of the liquid.

Place in the refrigerator.  The red onions should be ready in about 30 minutes, but taste best after a day or so.  Will keep in the fridge for up to 2 weeks.
