Little Ms. Magnolia’s Yum Yum Bowls

1 - 1 ½ pounds boneless chicken breasts or thighs
2 tablespoons soy sauce
1 tablespoon sesame oil
½ teaspoons season salt
¼ cup mayonnaise
¼ cup plain Greek yogurt
2 tablespoons ketchup
2 teaspoons paprika
2 teaspoons rice wine vinegar
1 teaspoon garlic powder
2 avocados
4 green onions
1 cup shredded carrots
1 cup sliced cucumbers
1 cup peanuts
Cooked rice or cauliflower rice or ramen noodles
Optional:  chopped cilantro, roasted broccoli, shelled edamame, pickled red
onion, chickpeas

Sprinkle chicken with soy sauce, sesame oil, and season salt.  Let sit for about 15 minutes, and grill or cook in a skillet until no longer pink inside.

While the chicken is cooking, prepare the homemade yum yum sauce:  combine the mayo through garlic powder in a bowl.  Stir well.

Place the other ingredients in bowls on your counter–diced avocado, sliced green onions, shredded carrots, sliced cucumbers, and peanuts.  Add other ingredients as you wish, or if you have leftovers that need to be repurposed!

Let the chicken rest after cooking, and slice it into bite-sized pieces.  

Serve with chicken and toppings over rice, cauliflower rice, ramen noodles or even salad mix!

Serves 4-6.
