Frozen Peanut Butter Protein Bites 

6 oz (or ¾ cup) vanilla Greek yogurt
2 tablespoons peanut butter powder 
¼ cup roasted and salted peanuts, crushed
⅓ cup chocolate chips
2 pinches flaky or kosher salt
A few extra peanuts, optional

In a medium bowl, mix the yogurt, peanut butter powder, and peanuts. Stir well to combine. 

In a muffin tin pan, place 6 muffin liners. Place approximately 2 tablespoons of the yogurt mixture in each, dividing the entire mixture between the 6 liners. 

Freeze for one hour or more. 

Pour the chocolate chips into a microwave-safe dish, and cook on high in the microwave for 30 seconds. Stir well, and repeat 1-2 times until the chocolate is fully melted. 

Drizzle a scant 1 tablespoon over each peanut butter disk, and sprinkle with a few peanuts and salt. 

Return to the freezer until ready to enjoy. 

Let sit for 1-2 minutes at room temperature before eating to soften slightly (otherwise they’re difficult to bite into)

Makes 6 cups.
