Gnocchi Sheet Pan Dinner
Bake your vegetables, sausage, and gnocchi all together for a one-dish wonder dinner. About 5-10 minutes of prep for a tasty fall meal!
I love the Trader Joe’s Cauliflower Gnocchi, but I’ve used regular gnocchi for the boys and it works just as well. Just be sure to put the gnocchi on a separate pan as it tends to need about 5 minutes less cooking time.
Gnocchi Sheet Pan Dinner with Sausage and Vegetables
1 bag gnocchi
1 bag cubed butternut squash (sweet potato or regular potato work well, too)
A couple of handfuls of frozen green beans
12-16oz chicken sausage, sliced about 1” thick
Other vegetables you might enjoy: broccoli florets, peppers, onions, or mushrooms
2-3 tablespoons extra virgin olive oil
1 teaspoon dried thyme (or rosemary or oregano)
Salt and pepper to taste (about ½ -1 teaspoon salt, a little less pepper)
Preheat oven to 425 degrees.
Drizzle 1 tablespoon olive oil on a sheet pan covered with foil, parchment paper, or a silicone liner. Add the vegetables. Drizzle a wee bit more oil, and then sprinkle with thyme, salt, and pepper.
On a separate sheet pan, repeat with the gnocchi.
Bake for about 30 minutes or so, or until the items are browned slightly (gnocchi may need a little less time than the vegetable).
Serve in bowls. If desired, sprinkle with a bit of extra olive oil, pesto, or whatever sauce you choose (one of my boys likes this with a bit of mustard!)...or sprinkle with a bit of parmesan cheese.
