Grilled Chicken Kofta

If you love grilled chicken but are looking for a new take on the classic, this recipe is for you!

Grilled Chicken Kofta

1 pound ground chicken
¼ cup thinly sliced chives or green onion
¼ cup chopped fresh herbs (a mix of mint and parsley–you choose the ratio)
4 cloves garlic, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
½ teaspoon ground pepper

In a medium bowl, combine all the ingredients, stirring well to fully incorporate.

Cover and let chill for 30-60 minutes.

While the chicken is chilling, soak 6-8 wooden skewers under water (this prevents them from burning when grilling).

Remove the chicken mixture from the refrigerator and shape approximately ⅓ cup of the mixture around each skewer, tapering each end to help keep the mix in place. Repeat with the remaining mixture.

While you prep the grill, put the skewers back in the fridge or even the freezer to help keep the mixture in place on the skewers.

Preheat the grill to medium-high, or about 400 degrees. Once hot, spray or brush with oil.

Grill 3-4 minutes per side or until no longer pink and an internal temperature of at least 165 degrees.

Serves 4.
