Sesame Tahini Salad

Veggies:
2-3 cups shelled edamame
½ cup or so shredded carrot
½ cup or so diced cucumber
½ cup or so diced bell pepper
¼ cup chopped cilantro + extra for garnish
Dressing:
¼ cup tahini
2 tablespoons avocado or sesame oil
¼ cup rice vinegar
2 tablespoons tamari
1 tablespoon maple syrup (or honey if vegan is not necessary)
1 tablespoon fresh shredded ginger (or 1 teaspoon ground ginger)

¼ cup sesame seeds for garnish (optional)


Add all the veggies and cilantro to a medium bowl.

In a small bowl, combine the dressing ingredients. Stir well and pour over the veggies, tossing well. Garnish with sesame seeds and more cilantro, if desired.

Serves 8 as a side dish, 4 as a light meal.
