Raw Brussels Sprouts Salad with Apple Cider Vinegar Dressing

1 - 10oz bag Shaved Brussels Sprouts (or shave your own if you’re ambitious)
¼ cup apple cider vinegar
1 tablespoon extra virgin olive oil
1 tablespoon honey
½ teaspoon salt
¼ teaspoon pepper
¼ cup diced red onion
¼ cup roasted and shelled pistachios
¼ cup grated or shaved Parmesan cheese

In a large bowl, add the Brussels Sprouts, checking for any chunks that don’t look appetizing.

In a small bowl or jar with an airtight lid, add the apple cider vinegar, olive oil, honey, salt, and pepper.  Shake well to combine, and pour over the Brussells Sprouts, tossing well to combine.

(If possible, do this part ahead of time.  If you can’t, no problem–but the dressing softens the Brussels Sprouts and the flavors become more full if it can sit for an hour or even overnight).

Before serving, add the onion, pistachios and cheese.  Toss and serve.

Serves 4-6.
