Slow Cooker Carolina Pork BBQ
1 5-8 pound pork butt or shoulder
2 onions
Rub:
2 tablespoons brown sugar
1 tablespoon smoked paprika
2 teaspoons salt
1 teaspoon ground pepper
Sauce:
⅔ cup apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon red pepper flakes
1 tablespoon sugar
½ teaspoon dry mustard powder
½ teaspoon garlic powder
½ teaspoon salt
Quarter onions and place them in the bottom of the slow cooker. Place pork on top.
Mix the rub ingredients and sprinkle over the top of the pork.
Mix the sauce, and pour about ¼ or so of it on top of the pork. Reserve the rest of the sauce for serving.
Cook on high for 8-14 hours. Remove pork from the slow cooker, placing it in a large bowl. Let rest for 10 minutes.
Shred (can be done with two forks). Serve with a drizzle of sauce, either on its own or on buns (coleslaw on the sandwich is the traditional way to eat it).
Serves 3-4 people per pound of pork.
