Slow Cooker Lentil Soup

1 cup uncooked lentils
1 quart broth
2 tablespoons onion flakes
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon garlic powder
1 cup diced potato 
½ cup carrot
1 cup packed kale or other green, stems removed and chopped
Salt and pepper to taste
Optional: one pound cooked ground sausage or diced ham
For serving:  balsamic vinegar and fresh parsley

Add all ingredients except the meat (if using), vinegar, and parsley to the slow cooker.  

Cook on high for 4-6 hours, low for 8-10.  Check on the soup before serving (ideally at least an hour before serving), and add 1 cup of water if it looks too thick (if you add water, add about ¼-½ teaspoon salt as well). 

Serves 6-8.
