Strawberry Burrata Arugula Salad for One (can double, etc easily)

One good handful fresh baby arugula
3-4 strawberries, sliced
2 oz Burrata or regular fresh Mozzarella, torn into pieces
1 tablespoon chopped red onion or shallot
1 tablespoon salted and shelled sunflower seeds
2 teaspoons balsamic glaze or regular balsamic vinegar
2 teaspoons Extra Virgin Olive Oil
Pinch of salt and pepper

Place the arugula in a bowl. If the leaves are big, take a pair of kitchen shears or a paring knife (use the knife on a cutting board) and chop them up a bit.

Top with the strawberries, Burrata, red onion, and sunflower seeds.

Drizzle with the balsamic and olive oil, and toss a bit if desired. Sprinkle with salt and pepper.

Serves 1.
