Super Fast Beef Birria Tacos

This twist on taco Tuesday takes about the same amount of time as a typical taco, but with a novel flavor profile.  Typical Birria is slow cooked, but this super fast version delivers the rich flavor without the time commitment.

Super Fast Beef Birria Tacos

1 pound lean ground beef
1 tablespoon chili powder
½ teaspoon salt
½ teaspoon pepper
1 teaspoon ground garlic
1 tablespoon dried onion flakes
2 teaspoons ground cumin
1 teaspoon oregano
¼ teaspoon cinnamon
¼ teaspoon ground ginger
2 tablespoons tomato paste
1 cup water

To serve:
Tortillas
Cheese (we like queso fresca, but shredded cheddar works as well)
Chopped cilantro
Pickled onions
Avocado

In a large skillet over medium heat, brown the beef. 

While the beef is cooking, combine all the spices (from chili powder to ginger) in a bowl, and stir well to create your seasoning blend. Set aside.

Once the beef is fully cooked (drain any fat if needed), reduce the heat to low, add the tomato paste and stir a bit.

Add the spice mixture, and stir well to fully incorporate.  Add the water and bring to a simmer.  Let the beef simmer 5 minutes.

Serve in tortillas with desired toppings.
