Brazilian Lime Vinaigrette Salad

Salad:
6-8 cups salad greens, such as field greens, chopped
1 15oz can of black beans
1 14oz can heart of palm
1 12oz jar marinated (grilled if you can find them) artichoke hearts
½ cup sliced red pepper
½ cup sliced or shaved parmesan cheese

Vinaigrette:
¼ cup extra virgin olive oil
3 tablespoons fresh lime juice
1 tablespoon honey
1 clove of garlic, minced
½ teaspoon salt
½ teaspoon pepper

Place chopped greens in a bowl, and then top with desired toppings…I let everyone do their own salad.

In a jar with a well-fitting lid, combine all the ingredients for the vinaigrette, shake well, and pour over the salad!

Serves 4-6.
