Power Broccoli Salad

A vegan/gluten-free riff on the OG broccoli salad that my Aunt Di makes and is a family fave!

Power Broccoli Salad

4 cups finely chopped broccoli (uncooked)
½ cup chopped red onion
¼ cup sunflower seeds
¼ cup raisins or craisins

Dressing:
¼ cup apple cider vinegar
2 tablespoons extra virgin olive oil
2 tablespoons maple syrup
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon pepper

In a large bowl, add the broccoli, red onion, sunflower seeds, and raisins/craisins.

In a small bowl, combine the vinegar, oil, maple syrup, garlic, salt, and pepper.  Stir very well.

Pour the dressing over the broccoli and stir well to combine.

Tastes best if you let it marinate for a few hours before serving; stir again before serving.

Serves 6-8.
