Make Ahead Gluten-Free Gravy

1/4 cup butter
1/2 cup cornstarch

6 cups chicken or turkey broth (or bone broth)
1 teaspoon salt*
1/2 teaspoon fresh ground pepper
1/2 teaspoon onion powder
1 teaspoon poultry seasoning

In a stockpot over medium-low heat, melt the butter.  Once melted, add the cornstarch and stir quickly to make a paste (aka, a roux).  

Slowly add the broth, 1 cup at a time, to incorporate the roux into the liquid.  Once the roux is dissolved in the liquid, add the rest of the broth, and increase the heat to medium.  Whisk while the mixture heats and thickens, adding the salt, pepper, onion powder, and poultry seasoning.

Allow the mixture to come to a slow simmer and cook for 1-2 minutes, until the desired thickness is reached.

Makes about 6 cups of gravy, enough for 12-18 guests.

*many bone broths have very little sodium—so check your broth first. Some bone broths have 100mg or less of sodium per cup, whereas traditional broth can have 600-800mg per cup. Each 1/4 teaspoon has about 575mg of salt, so definitely check your broth before you add more salt.
