One Dish Baked Orzo, Sausage, and Vegetables

1-2 tablespoons extra virgin olive oil
12 oz chicken italian sausage, diced
1 cup cherry tomatoes, halved
½ cup diced bell pepper
½ cup diced onion
4 cloves garlic, minced
1 cup frozen chopped spinach
1 cup gluten free orzo
3 cups broth
1 teaspoon salt
½ teaspoon ground pepper

Preheat oven to 400°.

In a 9 x 13 baking dish, pour the olive oil, the bottom of the pan, and then add the sausage, tomatoes, bell pepper, onion, and garlic. Stir to mix a bit and coat the items and olive oil.

Bake for 10 minutes or until the items start to brown a little bit.

Add the spinach, orzo, broth, salt, and pepper and stir well. Return to the oven for about 15 minutes more.

Check the dish to make sure the orzo is cooked through, and if desired and sprinkle a bit of cheese on top! If using the cheese, return to the oven for three or four minutes or until the cheese melts.

Serves 6-8.
