White Chicken Chili
Slow Cooker White Chicken Chili
2 - 2 ½ pounds chicken thighs and/or breasts
1 large onions, diced
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 quart chicken broth
2 -15oz cans Great Northern or Canellini beans
1 - 4 oz can diced green chilis
1 tablespoon ground cumin
1 1/2 teaspoons dried oregano
4oz light cream cheese
Optional toppings:
Shredded cheese
Sour cream
Green onion
Cilantro
Avocado
Add all ingredients except the cream cheese and toppings to the slow cooker. Cook on high 6-7 hours, low 10-12 hours.
Remove the chicken and shred it with two forks (it will just fall apart). Add the shredded chicken back into the slow cooker and stir. Add the cream cheese, stirring to incorporate.
Serve with desired toppings
